“Our” Fries at Fabel Friet
No French or Belgian fries here; at Fabel Friet, they fry authentic Dutch fries. Every day, they give their all to fry the tastiest fries in Amsterdam.
They use only the best quality Agria potatoes from Dutch soil, specially developed for fries.
The fries are freshly cut daily and then pre-fried at a low temperature, essentially cooking the raw potato. This process removes much of the moisture from the potato. After pre-cooking, the fries are cooled to 5°C before being fried again.
At Fabel Friet, they fry their fries with the skin on, preserving the flavor and reducing about 10% of waste from cutting. Additionally, they use 100% plant-based oil for frying, resulting in delicious golden fries that are soft on the inside and crispy on the outside.

Specialty of Fabel Friet
Fabel Friet’s specialty is fries with freshly grated Parmesan cheese and homemade truffle mayonnaise. The Parmigiano Reggiano they use comes directly from the Boselli cheese shop run by brothers Nullo and Marcello in the Parma region, Italy. This cheese is made using traditional methods with a focus on animal welfare.
Sustainability
Sustainability is paramount at Fabel Friet. They use eco-friendly packaging and fry their fries with the skin on, reducing waste by 10%. The energy they use comes from a supplier voted the greenest in the Netherlands for nine consecutive years. Additionally, their used oil is recycled into biodiesel, contributing to a circular economy.
Since the opening of their store, they’ve been actively involved in keeping the neighborhood clean. They pick up litter daily and empty full trash cans in the nearby area in collaboration with the municipality.
Crowds at Fabel Friet

Fabel Friet has also formed partnerships, including with Super Lyan, a cocktail bar in the heart of Amsterdam. Their crispy potato croquettes with truffle mayonnaise and grated Parmesan cheese are now featured on the bar’s menu.
The name ‘Fabel’ is derived from the first names of the two young entrepreneurs, Abel and Floris, who gained their first experience in the fry business with a fry bike.
